Quad friendly-quick-good
Santa Fe Chicken
In the crockpot, takes 5 hrs. Drain and dump 1 can black beans, 1 can corn, 1/2 c. salsa into crockpot, stir. Place skinless boneless chicken breasts on top (how ever many you need); top that w/ 1/2 c. salsa, cook for 4 hrs. on low. Chunk a block of cream cheese on top, cook for an hr. covered on low. Stir it up, serve over rice. grilled cheese and campbell's minestrone soup...i do that independently a lot. i make the grilled cheese using pam than have my pca put the soup in a container in the microwave in the mornin so i can cook it l8er in the day. not fancy, but its really really good.
