Oh yah! Real comfort food. Had it frequently growing up and still occasionally do. Good liver is hard to get around here. Even the nearby meat market seldom has any. My favorite is veal liver, but pork is quite good too.

I have had pork liver once and couldn't get past the texture....the stuff I had was grainy. Is that the case with all pork liver? Would love to try veal liver!

I think liver whether beef, veal, pork, or chicken is a very polarizing food. Either you love it or you hate it, there is no I can take it or leave it. Personally, I have a hard time just looking at liver. No offense, Larry or anyone else.

All the best,
GJ

Graininess and bitterness are the outcomes of over cooking. That is true of even beef liver. Both veal and pork liver have a somewhat milder flavor than beef. Chicken livers are really grainy when cooked. A lot of people do not like that but love the livers when they are turned into a creamy pate.

I cook liver as if it were fish. If overdone it starts to dry out and toughen.
