Getting to be that time - Chili

So it's getting cooler, closer to good weather for chili.

So here's a recipe

Pretty good Easy Chili

2 1/2 lbs ground chuck
1 large onion, chopped fine
2 28 oz cans whole tomatoes
1 6 oz can tomato paste
1 green or other color bell pepper, diced (optional)
8 oz mushrooms, sliced thinly (optional)
salt
chili powder to taste
1 16 oz can dark red chile beans (optional)

1 Brown meat & onion.
2 Pour off grease.
3 Add tomatoes (squished) & tomato paste.
4 Add green pepper and mushrooms if desired.
5 Add chile powder & salt to taste (takes quite a bit of chili powder).
6 Cook covered for 1 hour.
7 Add beans.
8 Cook covered 1/2 hour.

Cooking Tips

If it's at all greasy, rinse with hot water when draining off fat.
Freezes very well.

Really good but not as easy chili - but worth it.

Texas Style Chili con Carne

Begin the day ahead.

3 1/2 lbs top round steak, cut in 1/2-inch cubes
5 Tbs oil
2 cups onions, coarsely chopped
4 cloves garlic, minced
4 Tbs chili powder
1 1/2 tsp oregano
1 1/2 tsp ground cumin
1 tsp crushed red pepper
2 cups beef broth
28 oz canned whole tomatoes
6 oz tomato paste
1 Tbs salt
1 tsp sugar
1-2 Tbs yellow cornmeal

1 Pat meat dry.
2 Heat 3 Tbs. oil in dutch oven.
3 Add meat all at once. Sear it, turning constantly, 3-4 minutes until lightly browned.
4 Remove meat with slotted spoon and set aside.
5 Add 2 Tbs. oil to pot. Sauté onion and garlic till onion is wilted, not brown.
6 Stir in chili powder, oregano, cumin, and red pepper flakes. Stir well until onions are coated.
7 Add broth, can of tomatoes with juice, tomato paste, salt, and sugar.
8 Break up tomatoes with spoon.
9 Return meat to pot.
10 Simmer covered 1 hour.
11 Uncover and simmer 40-50 minutes until meat is tender.
12 Cool, cover, and refrigerate overnight.
13 Bring slowly to a boil; simmer until heated throughout. If runny, do not cover; if thick, do.
14 Thicken with cornmeal.

My Chili Recipe:

1 lb lean hamburger
1 green bell pepper
1/2 medium yellow onion
1 Tbs minced garlic
1 14.5 oz can diced tomatoes, drained
1 8 oz can tomato sauce
1 15 oz can Ranch style beans
Garlic salt, onion powder, pepper, and either chili powder or cayene pepper to taste

Brown hamburger. Add bell pepper and onion and saute until the veggies are softened. Add minced garlic and stir until fragrant. Add everything else, and bring to a boil. Serve with cornbread, crackers or fritos.

My chili recipe;

Drive to Wendy's.
Go slowly through the parking lot.
Go around the building to the back at the drive through menu.
Stop.
Respond to the mystery person when they ask you "May I help you".
Order 3 small chilis @ $1.59/each plus tax, (no cheese).
Proceed to the first window and pay.
Proceed to the second window and pick up your chili.
Carefully drive to a parking spot.
Remove one chili from the bag, open and set it on the dashboard.
Let it breath properly.
Remove 3 crackers packages from the bag.
Pulverize them with your knuckles and gently empty them into the chili.
Stir.
Remove 3 paper napkins and one plastic spoon.
Enjoy your 190 calories, 6G fat, and 14G of protein!

p.s. crack your window open a little in case of gas.

I bring them home, put them in the refrigerator and heat them in the microwave for 2 min. for lunch a couple days.....lol........but I really do love chili!

I laughed and made fun of my best buddy when he brought over a pot of chili for a football game one day that had mushrooms in it. I told him, NOBODY puts mushrooms in chili...........I'm so glad he's not a member this forum!!!! His chili was pretty good, but MUSHROOMS??

Ah, a few mushrooms never hurt anyone. I never used to add them, but my husband likes them.

Who is he? I'm gonna tell...

Here is the one I make it's hot and sweet which is always a good thing,



1 pound fresh mushrooms, sliced
3 14 ounce cans red kidney beans
1 14 ounce can brown beans in tomato sauce or pork and beans
3 14 ounce cans tomatoes; pureed in blender
2 pounds minced beef or lean hamburger, browned
1 teaspoon crushed garlic
1 teaspoon cayenne powder
2 teaspoons chili powder
1 teaspoon crushed red pepper or local fresh hot peppers to taste
2 heaping tablespoons peanut butter
1 square unsweetened baking chocolate

Brown meat. Combine spices with tomatoes in blender. Combine all ingredients except chocolate and peanut butter in pot. Heat until warm, then add chocolate and peanut butter, stirring until they are mixed in. Bake at 300F or on the stove at low heat for 6 to 12 hours, stirring regularly. You should not need to add additional water, as the tomatoes have plenty. Freezes well, tastes great.
