The Perfect Burger
Grilling weather is here, and I love hamburgers. The secret to a good one starts of course with the hamburger patty itself. I add salt, pepper, cayenne pepper, sometimes an egg, and about 1/2 cup of Jack Miller's barbecue sauce (another local favorite) per pound of meat. Too much sauce makes the patties fall apart, but that's when the egg helps.

In an effort to eat less red meat (except steaks of course) we've started using ground turkey instead of ground beef for alot of foods like spaghetti, chili, tacos, etc. However for burgers it tends to fall apart so I make them with half turkey and half ground beef, mix in finely chopped onion, salt and pepper. We eat them on big onion buns with everything. The ground turkey makes it more tender and there is such a difference in the amount of fat. They're the best!!!

Diamond, use an egg to hold the meat together. I often use ground turkey, the egg also adds a little moisture.
Marth, Had burgers last night. The secret is not the patty, but the grill. I have bot gas and charcol grills (everything is cooked outside in the summer). The charcol grill must be used when cooking a burger, simply for the flavor. Then, the only thing to add to the patty is the before mentioned egg (one egg to one pound) and salt and pepper. If grilling for my friends, I add chopped fresh jalapinos to the meat. |

I normally don't crave hamburgers at 7:45 a.m. but I am now! Booster, I agree about charcoal versus gas. I unfortunately have a huge beast of a gas grill. I miss my Old Smokey. Throwing in some mesquite smoking chips would add some flavor too.
I like mixing the turkey and beef, but I still think the grade of meat used is important. Doesn't mean I always buy the good stuff, but I enjoy it immensely when I do. ![]() Chopped onions? Yum! Jalepenos? Wow! Never heard of that but will try it sometime. Think I know what I'm eating for lunch today! |

Yea, I always have wood chips soaking, pull em' out, toss em' in an aluminum foil boat, and set it near the burner. Whish I could do the same with a chunk of charcol
for the flavor.I will tip my hat to the fact you are right and I was too quick in my initial response. A good meat does make a difference. I also like meat from HEB that is 80/20. But for less fat, albeit a little dryer I will go 90/10. You have to try the jalapino idea. Also, another idea, for zing is to add a Hidden Valley ranch packet (the powder for making dressing) to a pound of meat. Yumm!!!! But we Texans add ranch to just about anything .

Wow the ranch dressing sounds awesome too! Lordy, I am having major hamburger cravings right now. In a few minutes I'm going to order a burger from Hub City Diner here (one of the best burgers in town) and a big thick chocolate shake and fries. Can't be good for my girlish figure, but TOO BAD!
BTW, booster, when I was zooming down Westheimer I saw the HEB there and thought about you. I enjoy shopping higher scale grocery stores now and then. Not to jump topics here, but how much do you want to bet they carry Community Coffee there?

I know they do, I go to that one every month or so. That one is a "Central Market" a more upscale HEB. I have a big HEB near my house and absolutely love it there. To think, ten years ago HEB was a "hick" grocery store, gotta love us hicks, we evolve everything.
Also, girlish figures can use a little "nurishment" too. Nothing like a hamburger and fries to "keep" a figure .
