Pepper Stout Beef
I had a craving for shredded beef and did a quick 5 hour pepper stout beef. Also had some fresh local corn, fried zuchini and yellow squash.
3.5lb Chuck Roast seasoned with salt and pepper, smoked with apple and cherry wood for 2 hours, then added the peppers, onions, Guinness, garlic, salt and pepper. Ready for the pepper stout bath. ![]() Beef is done and shredded. ![]() Fried fresh local zuchini and yellow squash. ![]() Fresh local corn. ![]() Dinner is served!

Mmmmm!
I have been craving grilled red, yellow and orange pepers, but they are so high right now. There was pork tenderloin on sale for 1.98 a pound, so bought a 10 pound one and had it cut to chops. Marinated in wine, garlic and some herbs (OK,confess was a premix) and tirned out perfect. Freaks MIL that I do not overcook/incinerate the pork, but she liked it. The simple sliced russets I saw you make have been a big hit around here. |

We rode around on Saturday on a Veggie hunt.....and taking pictures. I got to see the country where I am now living and got to take some stormy pictures. Lots of barns and beautiful scenery here.....
We found lots of local farms selling fresh vegetables and lots of different kinds of tomatoes. I miss the tomatoes my grandpa used to grow and I found most of the varieties within a few miles of us. I have been eating tomato sandwiches and tomatoes at every meal. The shredded beef was wonderful.

Everything looked good. So hard to find veggies around here. Was way too hot all summer and not enough rain..... I miss my dad's garden.....it was wonderful! We canned and froze veggies all summer. enough to last through the winter months. He grew everything, even sold some.
