    Medium rare. We raise our own. It tends to be somewhat tougher than the commercial meat because there's less fat through the meat. Grass fed, with just a little grain each morning so they always come arunnin' when I call!

    Just done; because that's the only way a salmon steak is ever supposed to be cooked. Fish allows very little range between under and over cooking.

    med rare to med. Thin slice of pink in the center, well done is losing 1/2 the flavor. Also, NO A-1 or other sauce, a GOOD steak doesn't need flavoring.
