    Basic Spicy Stir Fry...(for Beth)

    This is a good basic stir-fry meal that is low fat and high in fiber and mighty tastey. You can add or subtract on most things if you don't like but try to keep the spices all in.

    Note: All items are sliced or diced to 1/2"x1-1/2"x1/2" pieces. Slice celery about 1/4" in diagonal. This is important so they cook fast and take about the same time.

    2 boneless, skinless chicken breasts or 2 c. diced pork or lean beef.

    1 c. marinade (see below)

    1/2-1 c. cornstarch

    2 c. each of celery, onion, beansprouts, green red or yellow bell pepper or some of each.

    1 c. mushrooms (optional)

    1 tsp. Chinese chili-garlic sauce (2 if ya like it hot)

    1/4 c. lemon juice

    2 tbs. soy sauce

    3 tbs. grated fresh ginger root

    2 tbs. lemon zest

    1/4 tsp. sesame oil

    4 green scallions cut in 1/2" pieces

    2 tbs. toasted sesame seeds

    Marinade:

    1/3 c. soy sauce

    1/4 c. brown sugar

    2-3 cloves mashed or finely chopped garlic

    1/2 of the grated ginger, lemon juice and lemon zest

    1/2 tsp. each of sesame oil and almond or walnut oil

    -----------------------------------

    Cooking Instructions:

    Combine all ingredients for marinade and whisk together. Marinate meat for 1/2-1 hr. Remove from marinade and pat dry on paper towel. Discard marinade.

    Dredge meat in cornstarch, shake off excess and place on separate plate.

    Cut all ingredients and place in separate bowls. Spices and ginger, etc. can be combined.

    Heat 2-3 tbs. oil in wok or large skillet till HOT. Add 1/2 meat and stir fry till crisp and cooked (about 5 mins). Drain on paper towel. Repeat with other half of meat, cover with paper towel and set aside.

    Wipe wok with paper towels to remove any crusties, etc.

    Heat 2-3 tbs. oil till HOT. Add veg's about 1 min apart starting with celery, then peppers and mushrooms, then onions and spices. Stir-fry till tender-crisp. (about 3 mins more once all veg's are in wok)

    Add beansprouts and scallions and stir-fry till tender-crisp. (about 3 mins more)

    Add meat, toss to warm and serve over rice.

    Garnish with toasted sesame seeds. Serve with extra soy sauce and chili sauce on side.

    Prep Time: 30-45 mins.

    Cooking Time: 20-30 mins.

    Be careful not to overcook vegetables. Make sure that your oil is HOT before adding ingredients and cook on high stirring often.
