    home made icream

    dang its good and I control the calories 5 cups of really ice milk 240 calories

    4XL yolks
    3/4C sugar
    3C heavy cream
    1C chopped pecans
    1/2t fine (popcorn) salt
    1/4lb salted butter

    Saute pecans in butter until darkened (but not burnt)
    Extract pecans from butter
    Salt lightly
    Refrigerate

    Mix yolks and sugar thoroughly
    Warm cream until foaming around edges
    Slowly introduce warm cream to egg mixture, whisking constantly
    Return mixture to warm heat, stirring constantly (wooden spoon)
    Remove from heat when thickens to coat back of spoon
    Mix in butter (strained of pecan dregs)
    Chill several hours, stirring often to prevent film from forming on surface

    Transfer to ice cream maker
    Add pecans two minutes before freeze is complete

    4700 calories

    Ice cream is one instance where calorie counting should be forsaken!

    I've become addicted to Hagen Daas!
    One spoonful is too much and a million is not enough
    So I've resorted to only eating what I can load into a sugar cone more or less daily!

    Oh, it IS! You get marriage proposals with this stuff!

    But, a tablespoon is about 100 calories... so, "Heaven" comes in very small bites

    I'm trying to sort out how to do "ices" (move all the calories into the sugar, instead of the fat) -- but, I think you need a special sort of dasher to get the ice crystals really fine (smooth texture).
