    chinese dumplings

    so these need to be made with the fresh dumpling dough. the chinese ones are round. you can make these with japanese wrappers but they are often found frozen and i dont like them.

    so my filling is a combo of:
    1lb ground chicken
    ginger
    fresh garlic
    green onion(just the green parts)
    napa cabbage(finely shredded)
    soy sauce
    fish sauce
    black vinegar

    dipping sauce:
    soy sauce
    fish sauce
    ginger
    garlic
    green onion
    mirin

    the only thing you need to be careful of using is the black vinegar. IT IS VERY STRONG!!!!!!!! so no more than 1/4 teaspoon of it or else you'll literally will have to double everything else. the other things i just put how much i am in the mood for :P

    take your wrapper, then fill it with the filling. no more than 1/2tsp - 1 tsp depending on the size of your wrapper, use water to seal the dumpling. have a pot of boiling water ready. add the dumpling(chinese: 饺子 pinyin: jiǎo​zi) to the water. they float to the top when they are done!

    eat with rice and use the dipping sauce. enjoy!!!

    they are tasty!! you can make them and freeze them (just fill the wrappers and dont boil them" and they last for 1month that way. but to be honest, i rarely ever have leftovers to freeze! 1lb meat = ~50 dumplings if i recall....

    Now you're making me salivate, and I've vowed to cut back on my dumpling consumption else I'd happily eat them at least once a week...

    haha my recipes usually dont have measurements/proportions. everyone has different tastes so put in what u like! i also like black sesame seeds in my dumplings
