    Cashew Cream

    I'm vegan, so I've never tried this recipe with cow's or goat's milk, but it is delicious as is with fresh fruit for dipping. You can tweak it however you like to suit your taste, but this is the basic recipe:

    CASHEW CREAM*******************
    1 cup raw cashews
    6 pitted dates
    1/2 to 3/4 cup unsweetened almond milk
    1* Tbsp vanilla extract
    Put cashews and dates in a small saucepan with almond milk to cover. Simmer on medium heat for 3-5 minutes, then allow to stand for 20-30 minutes.
    Separate the date/cashew mixture from the liquid and pop it in a blender. Blend until smooth & creamy, adding the milk from the simmering solution a little at a time until you reach the desired consistency.

    P.S. I don't know much about how well it keeps, because it never lasts that long. Enjoy!
