    Blackened Mahi Mahi

2nd night in a row, I had to cook inside due to 'dinner time' thunderstorms.

    .83lb of mahi mahi

    Seasoned with Zatarains Blackening Seasoning.

Threw some vegetables in the pan first.

Seared the fish skin side first..

Flipped at the 5 minute mark for 5 more minutes.

    Served over Wild Rice Medley.

100 degree temps and thunderstorms are messing up my grilling too.

Hey grillin's just getting started in the Pacific NW, it's 50's and 60's, we just wear a sweater. Damn it's a cold , cold spring, wet too. But shouldn't complain, no thunder storms or tornados to deal with, just the dam cold!
