Another super easy chicken recipe is Outback's Alice Springs Chicken, I make it often and it's awesome.

Brown boneless skinless breast, then pop in the oven until almost done. Remove from oven top with honey mustard, mushroom, cooke bacon and cheddar cheese. Plop back into th oven until the cheese is melted. Top with chopped scallions.

I want to try that. It is hard to find good recipes that do not have something in it that apparently can now kill me. This one looks great!

How did it turn out? I'm not a huge fan of chicken or salsa.

I made taco soup for the first time in my crock pot. So good and my bf loved it. It was easy too. We stirred in shredded cheddar, sour cream, and broken Cool Ranch Doritos into our individual bowls. Reminded me of chili...except w/ corn and it had a southwestern spice/taste.

OMG this was good! And easy. Took a bag of boneless, skinless chicken breasts, thawed em out, put them in the crock pot with a jar of Great Value's chunky black bean and corn salsa and half a jar of water and a packet of taco seasonings. Cooked for 6 hours (at the 4th hour threw in a cup of rice).
Went to serve and the chicken fell apart. My boys flipped out it was so good I ate mine in a bowl over tortilla chips, they ate theirs in a fajita.
Thanks for the easy, delish recipe!
