    The aroma of ham & bean soup

    fills the house. It we be served at supper with a salad and a fresh loaf of Jewish rye bread. Nothing better for chilly/cold weather and easy to make. The recipe I use:

    Senator Lodge’s Bean Soup

    3 ½ quarts water
    2 cups dried navy, northern or similar beans
    1 large onion peeled and pierced with 3 whole cloves
    1 large bay leaf
    2 tablespoons dried parsley leaves
    2 teaspoons + 1 tablespoon salt
    2 1-lb ham hocks or 1-2 lbs ham
    1 ½ cups chopped onions
    1 cup chopped celery
    3 garlic cloves (peeled and chopped)
    ½ teaspoon fresh ground pepper

    In a 6-8 quart soup kettle bring 2 quarts of water to a boil. Add beans and boil 2 minutes. Turn off heat and allow beans to soak for an hour.

    Add the onion with the cloves, bay leaf, parsley, and 2 teaspoons of salt. Simmer covered for about an hour. Remove and discard onion/cloves.

    Add 1 ½ quarts water and ham hocks/ham, and bring to a boil. Simmer covered for 2 hours.

    Stir in chopped onions, celery, and garlic. Add 1 tablespoon salt and the pepper. Simmer partially covered for 45 minutes.

    Remove ham hocks/ham. Remove/discard bay leaf. Discard bones and fat and dice up the meat. Return to soup. Serve.

    This freezes very well.

    That sounds delicious! I think I will give that recipe a try when I get out off of this bed rest. Thanks for sharing.
