My family (my wife and son) have stayed at the Sommerset Suites Hotel in Hillcrest on two occasions and were very happy. Not super deluxe, but the room was well maintained and the rates were reasonable. The suite includes a complete kitchen. The bathroom is accessible -- it has a typical bathtub (no roll-in shower). They have a shower bench, but it's not the greatest. My now 10-year-old son slept on the pull-out sofa on the living room. There are lots of excellent restaurants in the immediate neighborhood.

Here is a good resource for info on accessible hotels:

I would also recommend looking at Marriott Residence Inns (platform beds though so not good if you have to use a lift) and Extended Stay America (several locations for both) or Homestead Studio Suites in Mission Valley. I assume you will have a car or van for transportation. If not, you may want to select a location that has good bus service.
