They had some kind of quad knife for cutting food at the rehab place I went to, but I found it easier to use a regular knife. I think they called it a rocker knife.

my advice, adaptive design or not, is best to avoid them on a regular basis
it's too easy to nick yourself and not feel it, if you lack sensation in parts/all of your hand

Alissa, If you have any hand grip I'd suggest the one I got. Think it came from the Enrichments catalog from Sammons Preston. It has a plastic handle that is at a 90 degree angle from the blade. So this works great for those with contractures of the hand. You hold the handle which has a bit of the brass knuckle look to help position fingers. Then the blade faces away from you at the bottom of the handle and the sharp side is down. Hope that isn't too confusing (think of the letter "L" reversed so the bottom is aimed the other direction). It is much sharper than all the other quad knives I've seen and more for food prep than cutting steak.

I use a T-handle rocker knife like the one found on this page:

It is quite sharp and works better for me than the ones with L-shaped handles. As long as you go slow and careful/deliberate, and don't try to cut anything too tough you should be pretty safe.

it's very tough and cuts great, not like that stamped tin rocker knife a got in rehab. it can cut through chicken w/ ease and with some finesse, even steak.

I used to be a chef and while I was in rehab at Craig I designed my own knife that one of the rehab engineer guys there went down to his shop and made for me in a matter of hours.
It's a bit hard to discribe the thing but it works much better than those "saw handle" type knifes or the rocker knifes because it attaches to you at 2 points.There is a "ski pole" type grip with a velcro strap that you wrap your fingers around that is about half way out over the blade and then at the back of the knife there is a U shaped piece also with velcro that craddles your wrist. This way the knife doesn't twist and you can really put a lot more weight behind the knife as you cut. Basically it is an adapter that attaches to a regular chefs knife with a couple of set screws. You can move it from one knife to another.
