Well almost, we got sun and 15c today, it will be soon though, in another month I guess.One of the things I look forward to about winter kicking in is big pots of soup simmering on the stove. My fav is "Manhattan Clam Chowder" http://sci.rutgers.edu/forum/images/smilies/biggrin.gif

2 cans baby clams or fresh
2 stalks celery
2 carrots
1 onion
2 red potatoes, unpeeled
couple spoons of oil or bacon fat
can of diced tomatoes (14oz,undrained)
1 cup of clam juice or chicken broth
thyme
ground red and black pepper
couple spoons of cooked bacon

Cook celery, onion, carrot in oil or fat till tender, then drain clams and add juice to pot (top off with water to make 1 and a half cups) add 1 cup clam juice or broth. Add the potatoes,peppers and thyme, bring to boil. Add clams and tomatoes and bacon, boil again, turn down cook for a few more minutes.

I'd love to know your guy's fav soups, there's nothing quite like a hot bowl of homemade soup on a cold rainy day http://sci.rutgers.edu/forum/images/smilies/smile.gif

This is my favorite soup. My grandma found the recipe in a magazine a while back and has been making it ever since. On a cold day there is no other soup I would rather eat. It is very quick and easy to make. The hardest thing to do is chop, then just simply mix the cans together in a pan.

Spill-the-Beans Minestrone

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, finely chopped
2 (14.5-ounce) cans reduced-sodium chicken or vegetable broth
1 (15.5-ounce) can reduced-sodium garbanzo beans, rinsed and drained
1 (15.25-ounce) can reduced-sodium red kidney beans, rinsed and drained
1 (14.5-ounce) can Italian-style stewed tomatoes
2 cups chopped kale or Swiss chard (optional)
1/2 cup small shell-shaped pasta
1/4 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes

In medium saucepan, heat oil over medium-high heat until hot. Cook and stir onion and garlic 3 to 5 minutes or until onion is translucent. Add broth, beans, tomatoes, kale (if desired), pasta and seasonings; bring to a boil. Reduce heat; cover and simmer 10 to 12 minutes or until pasta is tender. Serve with grated Parmesan cheese, if desired.

(The Parmesan cheese with it makes an unbelievable taste)
