Martha,
We're currently building a new house with a design idea for complete accessibilty. One of the main concerns was the kitchen. Maybe this belongs more in the Life category than Food, but the basics we thought about were:
lowered countertops on 1/2 the kitchen (chose 31" countertop as compromise between leg clearance and counter height); included is the sink (rear drains, doors under sink that open and slide back along cabinet sides), cooktop (KitchenAid sells a 4 burner top with a 3" height profile), and ample working space with no lower cabinetry (roll under).
Everything in the kitchen has pull (slide) out shelving. We can put pots/pans, canned goods, utensiles, plates, glasses, etc. all on an accessible level that slide out.
Separate wall oven; Frigidaire makes a side opening wall oven. We mounted this over a slide out, burly bread board shelf type thing set at 28" knee clearance. This way something hot and heavy can be taken from the oven and slapped down on the shelf. Hope to eliminate the all-too frequent arm burns from the conventional oven/range combo.
The cabinets have just been installed and I'm quite pleased with the functionality. I'll try to post some pics to this thread when I get the chance.

Espousal, good luck with your house. Sounds like you've got the kitchen covered. We designed and built one about 11 years ago. It's definitely an experience that covers the whole spectrum of emotions, the agony and the ecstacy. My advice would be to measure, measure, measure EVERYTHING at the end of EVERY DAY. Seriously ... we began to wonder if those plans and measurements mattered at all to the builder. Don't assume anything.

i would love a oven that i could roll under but i am single just cook for me i use a mini oven
that i bought off hsn for 70.00 it does a great job and for 1 person its efficent
my sink i roll under/ i find i cook more now than before i got hurt
