Does anyone else here have to count carbs to regulate insulin dosage for Type I diabetes? It will, I know, get easier with practice, but oy evay! I've been going to nutritional classes and am learning alot, although snacking in class isn't appreciated! Did you know that you can subtract the fiber grams from the carb grams? And that a typical Margaurita has only about 4 carb/grams? One of the amusing parts of going to the diabetic teaching classes is the fact that not one of the staff of nurses is under 200 pds! And they're telling me to count out 5 potato chips for Jim, it's so funny. I knew I was in danger of going batty when I was measuring mashed potatoes for the Sheperd's Pie.

Switch to whole wheat/whole grains. It metabolizes a steadier pace into the bloodstream and doesn't spike the blood sugar as much, especially when eaten with protein. Enriched flour is evil!
