i call the potatos easy heart attacks because of all teh yummy stuff in them.......
in a sauce pan melt:
1 stick butter
1/2 lb. velveeta cheese
and 1 carton half and half.
pour over 1 bag of shredded frozen potatos
bake at 350 for 60 minutes.
yummmmmmmmmmm
i normally top them with crumbled potato chips or shredded cheese.

Actually, if you look at the fat content on a package of Velveeta versus cheddar, per oz, Velveeta has about 1/2 the fat that cheddar does. As for the butter and H&H, just pretend you're on the Atkins diet! http://sci.rutgers.edu/forum/images/smilies/biggrin.gif

I think this qualifies - easy to make, and I dare ya to eat just one!!
JALAPENO CHEESE SQUARES
4 eggs
1lb.grated sharp cheddar cheese
2T minced onion
1/3 cup chopped pickled jalapenos
1T jalapeno juice
Mix all ingredients and pour mixture into 8 inch pan. Place into preheated 350 oven and cook til top is browned, about 25 minutes. Cool to lukewarm, and then cut into squares.
