Here is a soup recipe that I modified and would be easy for quads:
Spicey African Soup
Minced garlic
chopped onions, frozen, precut
prepackaged bags of sliced frozen peppers-2
brown rice
vegetable juice
large can of diced tomatoes,use the juice also
peanut butter
crushed red pepper
olive oil
put some olive oil in your large soup pot with onions and garlic and saute, add the peppers-I get a Kroger brand that has red, green and yellow peppers. Dump in the can of diced tomatoes. Add the vegetable juice- I get the large juice can, like V-8 juice. Simmer, uncovered for 1/2 hour. Add crushed red peppers to taste- I use about a TBLSP. Add the rice-I use a brand called Golden Harvest(no preservatives or fat and has wild rice). Simmer about 15 to 20 minutes, then add peanut butter, about 1/4 cup, depending on taste. Simmer about 15 minutes and then enjoy.
TIPS:
In the produce department they have minced garlic in jars of oil, easy to just spoon out and use for cooking. Most of the time soup tastes better the next day, after it has marinated. Make large quantity of soups and freeze in smaller containers for those busy days. Add shredded chicken if you want meat in it. You can make large quantity of rice in the microwave and put in baggies to store in freezer for making recipes-open baggie and spread out in a coffee cup so you can spoon in the rice, let cool, close baggie and throw into the freezer. If you are making soup, try to put in the solid ingredients first so you don't get burned-less splash with adding broth or juice last.
