Azteca Soup

2 Tblsp Olive Oil
1 Tblsp Minced garlic
1 bunch green onions, chopped with the
green parts chopped also
minced jalapeno or hot sauce
Saute in your soup pot
Add:
5 or six diced plum tomatoes
sliced celery
1 green pepper
1 cup frozen or fresh corn
1 TBLSP lemon or lime juice
a bunch of fresh cilantro, chopped roughly
1/2 TBLSP Dill
Saute for 5 to 10 minutes
Add:
4-5 cups tomato juice
Simmer for about 15 minutes
Try serving over crumbled nach chips or throwing some diced avocado in, or garnish with sour cream.

I love this soup and it is very popular at our espresso shop for lunch. At home I make it with grilled cheese and bananna pepper sandwiches-yummy! Just thought you might like this Theo, since it uses all your favorite spices!

Nancie, it's just a grilled cheese sandwich with bananna peppers in with the cheese for a slight punch! I just cut off the stem,get rid of seeds and cut into strips, lay the strips onto the cheese. Sometimes use tomato slices, etc.

Theo-watch your spice measurments-I usually make soup in gallons, so I had to guess on the measurments. Debra
