I love garlic, I can't get enough of it on certain foods. My second favorite would have to be ground cumin. I love the smell and flavor it adds to food.

Jim, I'm with you on garlic. I cook with it all the time. Planting some in my garden this spring. The Cajun cook in me enjoys cayenne pepper, but I also love cinnamon, cloves. I'm also planting my favorite herbs for Italian food: rosemary, basil and oregano.

I wouldn't call it a spice per se, but the "Cajun Trinity"--onions, celery, bell pepper--is a foundation for almost every dish down here. The aroma alone of that sacred trio simmering in butter/oil is enough to inspire all sorts of experiences ... religious or otherwise! Then add a generous offering of fresh chopped garlic and ... Lawd have muh-cee!

Yuppers, at the local wal-mart. I lived in Louisiana for about 5 years or so. lived outside of Lake Charles and I went to school in Monroe at north eastern for awhile. Got to love the Cajun food.

Garlic is one of my favorites too!

My favorite overall is cardamon...mostly due to its connection to Christmas for me and many fond memories. All I have to do is open the container and take a whiff and it is Christmas for me!

among various herbs and spices, i simply love using chocolate, brown sugar and bacon. Add them all or some of them to your food and you will get a whole different experience.

And as kld mentions, kardamom, uhm, buy the whole capsules and use the seeds fresh ground, it is good for both cooking and baking, and it smells wonderfull.

I like peppers. The ginding kind. I have been playing with a canister I got that has three different mixes. I love the one with corrianders.

Anything that can come from a peper plant, IE chilli peper. Or any base ingredient in salsa. Garlic rocks too.

If my doc read this, she would give me a good kick in the tail section though.

Basil and Curry (not togehter)have an almost addictive effect on me. I mean, I just want to eat and eat the stuff until it gone!
